A new restaurant, owned by the couple who run Wandering Food Dude catering company, is set to open in Gansevoort this spring.
Called Salvato’s Bistro, it’s located on Brownville Road in the former Rozey's Tavern & Grill, which closed last year.
Owners JD and Lauren Salvato were initially looking for a place to help them grow their catering business, which they founded in 2021. Prior to that, the Victory Mills residents had worked at Longfellows Restaurant in Saratoga Springs for 16 years.
“Year after year, it's expanded. We've doubled our sales,” Lauren Salvato said. “We really needed a space that we could still grow our catering business and maintain what we already had.”
They went to look at the Brownville Road location with that in mind.
“We just fell in love with it. The restaurant is not huge, so it's not overwhelming, but the kitchen is huge, which is awesome,” Lauren Salvato said.
They closed on the restaurant in January and have been preparing for a late March or early April opening.
“We're just going to brighten it up a little bit, make it cozy,” Lauren Salvato said.
It’s a sizable space, seating around 70, with a backroom where they plan to host events. While it previously had a bar atmosphere, as Salvato Bistro, it’ll be more of a family restaurant.
“We just want it to be a place where a couple can come have a nice dinner, but then also come the next night with their whole family,” Lauren Salvato said.
They’re still fine-tuning the menu, though customers can expect to see some Wandering Food Dude favorites.
“We are definitely going to keep some of the fan favorites from Wandering Food Dude. Everybody loves our mac and cheese, our pulled pork,” Lauren Salvato said.
They’ve also had requests for pizza, so they may add that to the menu as well.
The bistro will be open Thursday through Monday, offering lunch and dinner service on the weekends and dinner service during the week.
“We love everybody in our community and everybody has supported us,” Lauren Salvato said. “So, I feel like this is giving back to them. I'm really excited for people to be able to taste our food and just come and hang out.”
